An Easy Quick Recipe Idea – Frito Pie

Are you in need of an easy quick recipe for a family dinner? This recipe is definitely a kid-style recipe, portable and fun to eat.

I first encountered Frito Pie many years ago in a restaurant in Texas, near the Mexican border. When I ordered it, I was quite shocked when I was presented with the chilli served over the chips inside the bag. I never understood why it was called “pie”, it’s definitely too messy to be considered pie, but whatever it is – it’s good.

Frito Pie

1 pound of ground beef

1 package chilli seasoning mix

1 can of diced tomatoes

1 can of kidney beans, drained and rinsed or freshly boiled kidney beans

6 individual packages of corn chips or 1 large bag

cheese, optional

Brown the ground beef. Add the chilli seasoning, tomatoes, and kidney beans. Simmer 10 minutes. Serve the chilli mix over the corn chips. The way I was taught to eat this was to open the bag of corn chips and pour a ladle of the chilli mixture into the bag. Hand one bag of chips and chilli to each person along with a fork. A very informal meal, but quick and fun to eat. I like to add cheese on top of the chilli but this is not part of the original presentation.
